Smoked salmon, peppers, and feta tartines + rocket salad

Ingredients
– A couple of pieces of smoked salmon
– A handful of chopped red bell peppers
– 1/2 small onion, diced
– A handful of green olives, pitted and chopped
– 1/2 cup of feta cheese
– Flat bread or crackers (I like using German whole rye flat bread)
– One bunch of arugula
– A couple of spoonfuls of sliced toasted almonds
– A couple of fresh basil leaves
– Olive oil, salt, pepper

Directions
1. Prep your ingredients by chopping your red bell peppers and green olives, and dicing your onions. Chop your smoked salmon into small pieces as well.
2. Heat a drizzle of olive oil over medium heat in a small pan. Add onions to cook down until soft and slightly translucent. Add peppers and olives, and continue to cook for a few more minutes. Turn off heat, and salt and pepper to taste.
3. Add smoked salmon pieces to your pan mixture, and combine.
4. Toast your bread (either on the pan or in a toaster).
5. Top your bread with a layer of feta cheese, and add salmon-pepper mixture on top.
7. Top with basil leaves, et voila! Enjoy.
