


Variations on avocado toast.
The creamy texture of avocado goes wonderfully with the crunchy exterior of toast. I love to do variations on avocado toast both because of its versatility and because of its health benefits. This can be a great brunch, lunch, or dinner (paired with a side salad).
Ingredients
– 1 avocado
– 1 lime
– A few slices of Halloumi cheese (or cherry tomatoes, of anchovy fillets)
– 2 eggs
– 2 slices of your favorite toast (I love to use multigrain for extra texture)
– A dash of ground red pepper flakes
– Olive oil, salt, pepper
Directions
1. Prepare your toast.
2. Depending on your preference, you can either slice your avocado (into little half-moons), or smash your avocado.
– If you slice your avocado, place the slices evenly on your toast, and sprinkle with salt, pepper, red pepper flakes. Drizzle with olive oil and squeeze fresh lime over the top.
– If you smash your avocado, do so in a bowl with salt, pepper, red pepper flakes, fresh lime juice, and a drizzle of olive oil. Spread evenly on your toast.
3. Prepare your Halloumi by slicing into several pieces, and frying in a pan with olive oil over medium-high heat until browned on both sides. Place on top of avocado toast. (OR, if using cherry tomatoes or anchovy slices, simply spread evenly over your toast, and go to next step).
4. Fry your eggs in the same pan over medium-high heat with olive oil and a dash of salt and pepper until egg is cooked but yolk is still runny.
5. Place eggs on top of toast ensemble.
6. Enjoy your toast with a cup of coffee or tea!
